Cassava Cake

Ingredients:

  • 4 cups grated cassava
  • 1 can condensed milk
  • 1 can coconut milk
  • 1/2 cup sugar
  • 2 eggs
  • 2 tablespoons melted butter
  • 1 cup jackfruit

Method:

Preheat your oven to 175°C. 

Grease a baking dish or line it with parchment paper.

In a large mixing bowl, combine the grated cassava, condensed milk, coconut milk, sugar, eggs, and melted butter and mix well until all ingredients are fully incorporated.

If using, fold in the jackfruit into the mixture.

Pour the mixture into the prepared baking dish and spread it out evenly.

Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and the edges start to pull away from the sides of the dish.

Remove the cassava cake from the oven and let it cool slightly before slicing and serving.
