1/4 cup olive oil

2 white onions or 1 bundle green onions

2  bell peppers of choice

3 garlic cloves

4 bay leaves

1 tablespoon ground cumin

2 cups rice

200g black beans

3 medium sized tomatoes with anaheim chili or serrano pepper

2 cups water

1/4 cup vinegar

salt and ground black pepper

  1. A large pot over medium heat and add the oil. Mix the chopped onions, peppers, garlic, bay leaves and cumin. Stir and cook for 12 minutes.
  2. Mix rice, black beans, tomatoes, pepper, vinegar and salt and water. Wait until boiled then cover and reduce heat. Cook until the rice is soft ready.
