Ingredients
1/4 cup olive oil
2 white onions or 1 bundle green onions
2 bell peppers of choice
3 garlic cloves
4 bay leaves
1 tablespoon ground cumin
2 cups rice
200g black beans
3 medium sized tomatoes with anaheim chili or serrano pepper
2 cups water
1/4 cup vinegar
salt and ground black pepper
- A large pot over medium heat and add the oil. Mix the chopped onions, peppers, garlic, bay leaves and cumin. Stir and cook for 12 minutes.
- Mix rice, black beans, tomatoes, pepper, vinegar and salt and water. Wait until boiled then cover and reduce heat. Cook until the rice is soft ready.
