Ingredients
- 1/4 cup olive oil
- 1/3 white onions or 1 bundle spring onions
- 2 red bell peppers
- 3 garlic cloves
- 2 bay leaves
- 1/2 tablespoon ground cumin
- 2 cups rice
- 200g black beans
- 3 medium sized tomatoes
- 6 thai red chili
- 2 cups water
- 1/4 cup vinegar
- salt and ground black pepper
Method:
A large pot over medium heat and add the oil. Mix the chopped onions, peppers, garlic, bay leaves and cumin. Stir and cook for 12 minutes.
Mix rice, black beans, tomatoes, pepper, vinegar and salt and water. Wait until boiled then cover and reduce heat. Cook until the rice is soft ready.
Serve hot with our organic chicken.
